BreadBakingDay # 10 - Breakfast Breads!

my bread for this BreadBakingDay # 10 launched by Melissa



the theme is that of bread for breakfast, I made these

sandwiches with ricotta
ingredients: 450 gr flour
Manitoba (both are fine but the 0 and 00)

ricotta 250 gr 25 gr yeast burra

10 gr salt 50 gr olive oil
water


prepare a chariot by combining 250 grams of flour to the crumbled yeast and 150 grams of cold water, work up to have a smooth mixture. let rise for about 2 hours until doubled. After this time, gently deflate the dough and then add the ricotta, another 100 grams of cold water, 50 grams of olive oil, 300 grams of flour, 10 grams of salt. work long hours until you obtain a homogeneous and well-strung.

to rest 30 ', then wipe the work surface, knead slightly and divide into pieces of about 50 grams. roll into balls, flour them and place them directly on the baking pan. let rise about an hour until doubled, bake at 200 degrees for 10 minutes, reduce to 180 degrees and cook (10 minutes).

Ricotta Cheese Bread Rolls

ingredients:

250 gr + 300 gr. all purpose flour

250 gr ricotta cheese

25 gr fresh yeast

10 gr salt

50 gr extra virgin olive oil1

50 gr lukewarm water + 100 gr room temperature water

Place 150 gr of lukewarm water in a mixing bowl and add the fresh yeast. Let it stand until disolved. Then add 250 gr. of all purpose flour to it and start kneading until you get a homogeneous dough. Cover the bowl and let it rise for two hours until it doubles in size.

Punch down gently the dough and add the ricotta cheese, knead it a little bit and add 100 gr. of water, the extra virgin olive oil, 300 gr. of flour and salt.Knead the dough until a firm, smooth homogeneous ball is formed. Let it rest for 30 minutes in the mixing bowl.

Then move the dough to a wooden cutting board, punch it down and divide it in little balls of 50 gr. each. Dust them with flour and put them on a backing sheet. Let it rise again until double (about 1 hour).

Place them in the oven at 200 (per errore ho cancellato il pallino dei gradi!) C for 10 minutes, then turn down the oven to 180 until the rolls are baked.
